For the moment it is currently not possible to use the wine stone for champagne as it would fizz to much and overflow but a version for the bubbling gold is in the works

Yes, any kind of non sparkling spirits can be chilled.

The alcohol level should be above 11% to avoid freezing in the Wine Stone.
